Boil cubed potatoes, carrots, onion, broccoli, salt, and about 1 tablespoon of vegetable base or bullion in 2 quarts of water. Once the potatoes are tender lower heat and about 1 cup of milk, 2-4 cups of cheese, 3 oz. of cream cheese, and a mixture of 1/4 cup of cold water and 1 tablespoon of corn starch. How much cheese you use depends on the how cheesy you want the soup. I used swiss and sharp cheddar cheese. Simmer until desired thickness. This also works in the crockpot.

I cut up russet potatoes, yams, and onions. I added some frozen carrots. I put all the veggies in the foil lined baking pan and topped it with chicken parts . I topped it with cumin, chili powder, seasoning salt and garam marsala. Then I put some olive oil on that and mixed it all together. I made sure the chicken was on top when I covered it with foil. I put it in the oven for about 40 minutes. Then I removed the foil and baked it for another 20 minutes. The only way I usually eat yams is like a baked potato, with a little butter and some salt. It was really good in this dish. I want to try and use them in more recipes.

Homemade Chicken Soup

I made the broth using the crockpot. I just put in chicken parts, carrot, celery, onion, bay leaves and salt. The longer you cook this the better it tastes and the dark the broth. Once it was done, I poured it through a strainer. I then shredded the chicken, put it back in the broth, added some new carrots, celery, and onion. I only had spaghetti noodles so I added them to the soup and cooked it until the noodles were just right. It does take awhile to make this, however it really tastes good. I made extra so that I have some waiting in the freezer for later.

Bread Crumbs

I usually just use my bread machine to make the dough. I like a soft crust so I just bake it in my own oven. The other day I didn’t set the bread maker correctly and it baked the bread. So I just cut the crust off and used the food processor to make bread crumbs. I put the crumbs in a freezer bag in the freezer and just pull it out when I need bread crumbs.

Whole Wheat Pancakes

I used a regular pancake recipe for these. I just substituted half the all purpose flour with whole wheat flour. Even my husband likes them. I usually make extra to put in the fridge for snacks or breakfast the next day.

Pumpkin Muffins

Everyone in my house enjoyed these muffins. Some of them had cream cheese in them and others had a crumb topping. The last time I made these I didn’t use cream cheese or the crumb topping. I also substituted half the all purpose flour with whole wheat flour. They didn’t last a whole day, everytime I turned around someone was taking another one.

Answers
I have really neglected this blog. I thought I would respond to some of the comments.
- Mariam- I’m sure you could make this bread without a bread machine/maker.
- Mona- I recently found some whole wheat flour on sale so I have started making the bread using some of it.
- Safa- In the past I have cooked the pizza before freezing it. If I do that again I think I will only partially cook it before freezing. Next time I think I will try freezing it before baking it.
I think I have some pictures I could post. I will try to do that in the next couple of days.

Soup

I made this soup using the leftovers from the Stuffed Chicken shown earlier. I really liked it. I also made a similar version in the crockpot using frozen boneless, skinless chicken breasts, but without the feta cheese. It was really good with rice.
