We hear a lot about breast cancer these days. One in eight women
will be diagnosed with breast cancer in their lifetimes, and there are
millions living with it in the U.S. today alone. But did you know that
there is more than one type of breast cancer?

I didn’t. I thought that breast cancer was all the same. I figured that if I did my monthly breast self-exams, and found no lump, I’d be fine.

Oops. It turns out that you don’t have to have a lump to have breast cancer.
Six weeks ago, I went to my OB/GYN because my breast felt funny. It was
red, hot, inflamed, and the skin looked…funny. But there was no lump,
so I wasn’t worried. I should have been. After a round of antibiotics
didn’t clear up the inflammation, my doctor sent me to a breast
specialist and did a skin punch biopsy. That test showed that I have
inflammatory breast cancer, a very aggressive cancer that can be deadly.

Roast Chicken Dinner

I made this the other night for dinner. I just used seasoning salt for the chicken. For the potatoes I peeled and cubed them. Then I coated them with oil, Parmesan cheese, and seasoning salt. The salad is spinach and tomatoes with a red pepper dressing I found on sale.

I didn’t do anything to the wings prior to grilling them. Once they were done I coated them in a buffalo type sauce I made.

I marinaded the beef in oil, lemon juice, seasoning salt and Worcestershire sauce. The chicken had the same marinade minus the Worcestershire sauce. The marinade woeked really well and I grilled them just right.

The tilapia was dredged through a mixture of flour, seasoning salt, and Parmesan cheese. The green beans were cooked with a little soy sauce, even my oldest who is very picky about veggies asked for more. He also wanted some peach mango salsa on the side.

Quick and Inexpensive Dinner

This is for Shaz. You should check out her cooking blog.

I don’t generally measure things when I’m cooking. For this just make the amount according to your own family.

  • Egg Noodles (cooked)
  • Tuna Fish
  • Cheese (I used extra sharp cheddar)
  • Mixed Veggies
  • Creamed Soup Substitute (I used vegetable bouillon for this mix, I also used milk when mixing it all together to use)


Just mix it all together and heat it up.

Thin Crust Pizza

I lost track f time this evening and needed a quick pizza crust recipe that I could use. I found this recipe. It worked out really well. This pizza dough doesn’t need to rise. I also used swiss cheese as suggested in the recipe.

Chai Latte Muffins

I made these muffins for breakfast yesterday. The recipe for these muffins can be found at bakingsheet. I used regular milk and yogurt instead of the soy milk and yogurt in the recipe.   I also replaced half the flour with whole wheat flour.  I didn’t top them either. My husband doesn’t like muffins that have any kind of topping on them. Everyone liked these. (Yes, I know this isn’t a very good picture. I’m just too lazy to edit it today.)
